Thin Mint Cupcakes

I hate to admit this, but when I was younger I was a girl scout. I wasn't a very good one, though. But that's besides the fact. The point is, I fell in love with Thin Mints. They were the perfect balance between chocolate and mint. I decided to reinvent these into cupcakes. Some Thin Mints and mint extract later, I had Thin Mint Cupcakes!

They were fantastic! Tastes just like the cookies!

Champagne Cupcakes

Delicious and classy! These were so much fun to make. The cupcakes and the frosting had such a wonderful bubbly flavor, I know that sounds crazy, but really! They tasted like bubbles! Such an interesting taste.

We toasted with them at the end of the night, and the edible pearls added a wonderful touch!
